Guests joined us for a unique evening to celebrate the launch of two new spirits with our first Pairing Dinner.
During our Barrel Aged Spirits Release, they were treated to a special four course dinner in our outdoor gardens, catered by our new kitchen. Each course featured a unique cocktail pairing. They also tasted our new spirits alongside our head distiller, Laura Walters, as she shared the creation of these unique spirits. Nordic Gold, an Aquavit finished in Rye Whiskey Barrels, and Olde Alchemist, a Geneivere Gin finished in Malt Whiskey Barrels, aged for six months and were ready to make their debut!
- Housemade Creamy Stracciatella with Ironton Genievre Herbed Local Honey and Microgreens Paired with: The Alchemist & the Egg: Olde Alchemist, Lemon Juice, Turbinado Syrup, Herbal Bitters, and Egg White
- Wood-fire Roasted Asparagus, Artichokes, and Green Onions with Walnut Romesco and Charred Lemon Paired with: Odin’s Spear Nordic Gold, Genievre Gin, Simple Syrup, Lemon Juice and Muddled Asparagus
- Pan Seared Scallop with Ironton Aquavit Cured Pork Belly and a Smoked Apple Glaze Paired with: Freyja’s Tears Nordic Gold, Apple-Coriander Gastrique, Housemade Vodka, and Lemon Juice
- Pear Pomegranate Pavlova by Black Box Bakery Paired with: Pearsephone’s Plight Genievre Gin, Ginger Liqueur, Fresh Pear, and Pomegranate Seeds
