Distillery Pub Fare

Check out our onsite kitchen for distillery pub fare inspired by our housemade spirits.

We craft each dish in house, using fresh, high quality ingredients, including fresh herbs from our distillery gardens.

Our pizza dough, rolls, crackers, cookies, and dog treats are all made in house using our spent grain. Spent grain is  created as our mash tun machine extracts nutrients from grain and creates a liquid that will eventually become our spirits.

We separate the spent grain from the liquids and then dry it for several days in order to add it to our doughs.  Spent grain adds a slightly nuttier flavor and makes for a richer, more delicious dough.

We also make our own fresh mozzarella, San Marzano pizza sauce, roasted garlic, and hummus. We use local whenever possible, including local hive honey and Jumpin Good Goat Cheese. We also use herbs and tomatoes from our onsite gardens.

Wood-Fired Pizzas

Our delicious pizzas are named after the mines from where we take our name. Ironton may be a ghost town now, but in the late 1800s, it was an important transportation hub between Ouray, Colorado and the silver mining camps of the Red Mountain District. We make each pie in house using spent grains from our distilling process and baked it to perfection in our wood fire ovens. Pizzas are 16 inches each.
