WOOD-FIRED PIZZAS

Our delicious pizzas are named after the mines from where we take our name. Ironton may be a ghost town now, but in the 1800s, it was an important transportation hub between Ouray, Colorado and the silver mining camps of the Red Mountain District. We make each pie in house using spent grains from our distilling process and bake it to perfection in our wood fire oven.

Pizzas are 16″ each and serve 2-4 people. Substitute Gluten Free Crust for $5.

– BARREL PROOF PROVISIONS –

AVAILABLE ONLY THURSDAY, FRIDAY, AND SATURDAY FROM 5 TO CLOSE

Our whiskey ages in char 2 new American oak barrels, imparting delicious flavors and aromas. We take our barrel proof whiskey and cut it to perfection with Rocky Mountain water to 86 proof, for your sipping pleasure. And for your dining pleasure, Barrel Proof Provisions offers distillery pub fare inspired by our premium award-winning handcrafted spirits. Cheers!

Items below are available most Thursdays – Saturdays from 5 to Close. Our food is prepared in two separate kitchens. To provide you with the freshest food and best experience, your order from both kitchens might arrive at different times. Thanks for understanding!

LIQUEURS

All our liqueurs use the same base spirit as our vodka and gins. We bottle all of our liqueurs at a higher proof than usual to add the ethanol flavor. We also use less sugar to make them less syrupy.

BITTERS

Mitchell Moore is known as “Mitch” by his friends and “Papa” by our Head Distiller, Laura. Mitch lives on the Oregon Coast with his wife, Dana. His days are often spent admiring his lawn gnome collection (forcefully gifted by his daughter), gallivanting across the countryside, relaxing by the lakeside and, last but not least, making tasty bitters. All of these bitters are Mitch’s original recipes recreated in house by his daughter, Laura.

Bitters were originally used for medicinal purposes mostly to soothe the stomach. Bitters came into the cocktail world as a cocktail balancer and to make spirits less harsh tasting. Bitters are an easy way to add complexity to any cocktail.
